Warming Winter Spice Blends, Part 1

Look to spice blends to brighten a bland dish and warm you during the colder months as well as provide surprising health benefits. Join Chef Nanette Davidson on this culinary adventure for a zesty introduction to the spices of India. Learn to make your own Madras curry powder and garam masala and find out more about the healing qualities of ginger, turmeric, cinnamon, cardamon and other traditional Indian spices. We'll turn the Arboretum classroom into a pop-up kitchen and prepare simple recipes for chutneys, dahls, biryani, papadam, and golden milk. 
 
Take either or both parts of this two-part workshop: Each part includes a discussion of featured herbs and spices, a spice blending session and a tasting of dishes created with the blends. 
 
Registration includes a $30 fee for supplies. A reminder email will list additional tools participants might want to bring of their own to use in class.
 
Nanette Davidson is a long-time culinary instructor for both adults and children. She founded the cooking program at the John C Campbell Folk School where she served as Resident Artist in Cooking for twenty years. In 2018 she authored The Folk School Cookbook. She has a small business baking sourdough breads in a wood-fired oven. She lives in Western North Carolina where she uses her own herb, vegetable and fruit gardens to create delicious meals for her community .
